Traditional Food to try in Albania - Fërgesë

"Të bëftë mirë" - An Albanian phrase you may have heard many times when dining outside in Albanian restaurants. It means : Enjoy your food.


Albania is well-known for its culinary and since our dear tourists love our delicious foods, we thought of sharing with you a nice & lovely recipe that you'll love it.


Today, our special recipe for you will be - Fërgesë with liver.


Fërgesë is one of Albanians main dishes. It's an authentic Tiranase dish because its origin is in Tirana. It is made with liver, peppers, fresh tomatoes, spices, and cottage cheese. The uniqueness of this dish is that it's baked in clay pan. You can serve it with toasted bread slices, olive oil and white cheese.

Follow the ingredients :

300 grams of fresh liver ( chicken or cow liver)


250 grams of cottage cheese


5 garlic cloves


2 chopped red peppers


Salt


Spices ( Black pepper, nut meg, oregano and paprika)


Fresh basil


2 tablespoons of butter


3 fresh tomatoes


Preparation of Fërgesë with liver :


First thing you should do is to clean the liver. You clean and wash the liver with fresh water from the sink. Then when the liver is dry you chop it in small parts. Put them in a plate and marinate with a bit of olive oil and salt.


Bring in stove a large, deep pan and pour in it a few drops of olive oil, the tablespoons of butter and chopped garlic cloves. You stir them together in a medium rare and when the butter is fried with olive oil, add the liver and the chopped peppers. You season all the ingredients with salt, black pepper,oregano, paprika and a bit of nutmeg.


Advice: Don't fry liver too much. Make sure it stays smooth.


Once the liver is cooked well, pour in the tomatoes, the cottage cheese and 1 glass of water. Leave it until it has completely absorbed the water. Mix it well and transfer it to the clay pan. Bake in the oven for about 10 -15 minutes until the fat comes to the surface. Serve warm with toasted bread slices and fresh basil.
