Albanian food is unique and the taste is incredible. One of the top reasons why tourists visit Albania is exactly for the food that we serve starting from appetizers to main meals and then drinks.
Today I will share with you one of my favourite, childhood dishes that is
popular in Albania.The taste of rice combined with tomato sauce and meatballs is fantastic.
You ready ?
Follow the ingredients
For the Rice
2 Cups of white rice
2 Tablespoons of fresh butter or olive oil
Chicken/ meat broth
Salt
For Meatballs
450 gr Minced meat
1 Small onion
1 Garlic essence
1 Egg
100 gr Bread crumbs
3 Tablespoons olive oil
Half a teaspoon of salt
Black pepper
For the Tomato Sauce
450 gr Tomato sauce
2 Tablespoons olive oil
1 Small onion
1 Bay leaf
Salt and pepper
The preparation of the Meatballs
First, start with a deep bowl and put the minced meat. Thinly chop the onion, toss the egg, toss two spoonable of olive oil, the bread crumps and the garlic.
Finally add a little salt and ground black pepper.
Mix all these ingredients by hand, until the meat is evenly mixed with all the other ingredients.
Once the meatball dough is formed, cover the container with a plastic kitchen bag and let it rest in the fridge.
Meanwhile, preheat the oven to 200 degrees Celsius and continue preparing the sauce.
The preparation of Tomato Sauce
In a pan toss the finely chopped onion and heat over high heat.
Let it heat up and then add the olive oil, the garlic clove without chopping it and the bay leaf.
When the onion is softened, after 3-5 minutes, add the tomato sauce and ground pepper.
Reduce the heat of the stove to a minimum and let your sauce get cooked for another 5 minutes.
Then take the meatballs out of the fridge to give them the shape you want.
Make your meatballs the size of a walnut or as small as the palm of your hand and slightly flat.
Meanwhile remove the sauce from the heat and choose an average square casserole about 28 cm.
Put the meatballs in oven and let them bake for 15 minutes until they get a golden brown color in the surface.
The preparation of Rice
First melt 2 tablespoons of butter and 1 of olive oil in a pan. Toss 2 cups of rice (or more depending on the number of participants) and mix them together until rice gets a little cooked.
Once cooked, add the hot meat broth and simmer for 20 minutes on low heat with the lid closed.
The moment the rice drinks the liquid and some holes are created on its surface, remove it from the fire and leave the lid closed for another 10-15 minutes.
Then take the meatballs out of the oven and serve with the rice and their sauce.
This wonderful mix will turn into your favorite meal of any meal.
